I saw this soup recipe the other day on Vegan Yack Attack. I decided to try the recipe today, but like many recipes I strayed away from the directions, but I ended up with some fantastic soup! I used carrots, kale, asparagus, jicama, acorn squash, tofu noodles black beans, pinto beans and vegetable broth.
I was always grossed out by the tofu noodles. They just looked like they had an awful texture. I was wrong! They are actually a pretty tough noodle. Try them!
