Here’s my recipe for vegan peanut butter rice crispy treats!
What you will need…
-6 cups rice cereal
-1 cup brown rice syrup
-1 cup brown sugar
-1 cup creamy (must be creamy!) peanut butter
-a pinch of salt
In a sauce pan combine the brown rice syrup and brown sugar over medium heat. Mix well until the mixture begins to bubble.
Juniper tried to help...or hinder. She jumped on my shoulder while I was mixing the hot sugar mixture. Bad kitten!
After the brown rice syrup and brown sugar mixture begins to bubble add the peanut butter and salt. Continue to mix until the peanut butter is combined with the sugar mixture.
Make sure your rice crispies are in a large mixing bowl.
Also make sure to lightly grease the pans you will be using. You can use a 9"x12" pan or cupcake pans work just as well!
After the peanut butter and sugar mixture returns to a boil, remove it from the heat and pour it over the rice crispies. Stir thoroughly while the mixture is still warm.
After that you can spoon the rice crispies into the pan.
I made a double batch so that's why it looks like there's an insane amount of sweets!
And now eat! If the rice crispy treats seem to be hard after a day or so you can warm them up for a few seconds and they taste just like they did when you first made them!
